Cut a pocket into each chicken breast. Wrap the pork roll slice around the cheese and parsley, and tuck this package into the pocket; secure with a toothpick. Melt butter inskillet and cook breasts over medium heat until they test done. If desired, remove breasts to a plate and keep warm; add wine to the skillet and make a quick sauce. These are good served over rice, or with biscuits. If you choose to get a bit fancier, these are terrific with a slice of fresh peach added to the pork roll package. A few mushrooms and a bit of chopped onion, chopped onions and apples together, or a splash of sherry added to the skillet after cooking the chicken make for a nice sauce.
